I tried foiling in Cozumel, and was doing pretty decently on the second day using the medium Slingshot mast. So I am thinking of getting a foil and going to 3rd avenue again. I have been going strictly to Waddell for the past three years. I was curious how do people gauge the depth of water when they need to dismount from the foil into the mud pits. It would be a shame to damage the wings, but slogging through mud more than necessary is also not great.

Go to Coyote instead on days where your session time will be at tide level below ~3 FT. Always deep enough at Coyote and water is usually flatter.

Agree Coyote is usually better. Having said that, at low tide you still have to walk out, sometimes quite a bit, to get to deep enough water. The water is also less choppy so easier to learn transitions. The problem with Coyote is that the bottom can be rocky and damage your wings, whereas at third it's all mud/sand.
